Tarator Bean Salad

From the kitchen of Mugla province and quite often made in the kitchens of Marmaris is the TARATOR BEAN SALAD. A great Spring time dish. Light and tasty.

TARATOR BEAN SALAD

RECIPE

Ingredients

1/2 kg fresh kidney beans
2 zucchini
1 red pepper
1 tomato
2 glasses of water
Tarator:
1 Turkish tea glass olive oil
4 cloves garlic
1 lemon
1 teaspoon salt

Kidney beans are washed and split into a few pieces and placed in boiling water. 10 minutes later add chopped pepper, zucchini and tomatoes. The kidney beans are boiled until stiffened. Strain. Place on a service plate. Sprinkle crushed garlic and remaining tarator mixture and serve. Decorate with mint and parsley or dill.
